TITLE: Sous Chef

REPORTS TO: Executive Chef

Position Summary: We are looking for a professional Sous Chef to be the second in command in our kitchen, following our Executive Chef’s specifications and guidelines. The successful candidate will employ its culinary and managerial skills in order to play a critical role in maintaining and enhancing guests’ satisfaction.
DUTIES & RESPONSIBILITIES:
• Assist Executive chef in planning and creating menus
• To maintain cost percentage on par or below expected budget.
• To monitor all stock levels, initiate and implement measures to control these.
• To implement and enforce all operating and control procedures to ensure that movement of foods into and within the kitchen is properly accounted for.
• To enforce internal control policy and procedures throughout the department, regarding purchasing, receiving and inventory control.
• Follow safety and sanitation policies.
• To establish with the Executive Chef, acceptable variances in cost and to explain variances beyond these acceptable levels to the General Manager.
• Plan staff levels and payroll costs in order to minimize cost whilst maintaining operational standards.
• Enforce HACCP Sanitation Standards.
• Cost menus and develop standard operating procedures for recipe booklets.
• Maintain and ensure that a Five Star level of food preparation standard is adhere to for every workstation.
• Plan and manage menus for buffets and banquets
QUALIFICATIONS/SKILLS:
• 3 to 5 years of experience as a Sous Chef
• Understanding of various cooking methods, ingredients, equipment and procedures
• Excellent record of kitchen and staff management
• Accuracy and speed in handling emergency situations and providing solutions
• Familiar with industry’s best practices
• Must agree to company’s health and safety protocols
• Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
• BS degree in Culinary science or related certificate would be a plus
ANY SPECIAL DEMAND:
• Must be proficient in English
• Constant standing and walking through out shift.
• Frequent lifting and carrying of (30) thirty pounds.
• Frequent kneeling, stretching, pushing, pulling, lifting.
• Able to work in hot, humid conditions.
Terms of Employment: Full Time, Weekend, Holiday (Shifts)
Transportation/Travel: Bus shuttle transportation is available
